Parmesan Chicken


1 clove garlic, minced
1/2 c. butter
1 C. dried bread crumbs
1/3 C. Parmesan cheese
2 T. chopped fresh parsley
1/4 tsp. salt
1/4 tsp. garlic salt
A large pinch of Italian seasoning
1/8 tsp. ground black pepper
2 lbs. boneless, skinless chicken meat

In bowl, combine the minced garlic with the melted butter. In another bowl mix together the bread crumbs, cheese, parsley, salt, garlic salt, Italian seasoning and pepper. Cut chicken into pieces no larger than 2 x 2 inches. Dip chicken pieces into galic butter, then into crumb mixture to coat.

Place coated chicken pieces into a 9 x 13 baking dish. Try to leave a little room between each piece. Drizzle with remaining garlic butter and bake at 450 degrees, uncovered for 15 minutes, or until chicken is cooked throught and juices run clear.

Serves 4 to 6.
