Sweet Potato Breakfast Pancakes
2 c. Bisquick mix
1/4 c. wheat germ
1/4 c. ground flaxseed
2 eggs
1 1/2 c. milk
1/2 c. pureed sweet potato
Blend Bisquick, wheat germ, and ground flaxseed. Add eggs and milk. Mix well. Stir in sweet potato. Cook on 325-350 degree F griddle until browned. Turn and brown other side. Serve with butter and syrup.
I personally mine with sugar free jam.
For a more fall-esque breakfast, you can also substitute sweet potato for 1/2 c. pureed pumpkin, 1/4 sugar/sweetener, and 1 Tbl cinnamon. I like these, but the kiddos don't like the cinnamon and syrup combo. Everyone's different
