Breakfast Casserole
1 (32 oz.) pkg frozen hash browns
2 c. diced ham (bacon, sausage, etc.) cooked
2 g. grated cheese
6 large eggs
1/3 c. milk
1 c. cottage cheese
1/4 tsp. ground black pepper
Sprinkle half of the hash browns into a greased 9x13-inch pan. Layer ham and cheese, then sprinkle remaining hash browns on top. In a separate bowl, whisk together eggs, milk cottage cheese & black pepper. Pour this mixture over the hash browns. Store in the refrigerator overnight. Bake uncovered at 350 degrees for 45-50 min. or until light golden brown & firm in the center.
