Original and Modified Zucchini Brownie Recipes

Original Zucchini Brownies


Brownies
2 c grated zucchini
1 c oil
1 tsp salt
½ tsp baking soda
2 tsp vanilla
1/3 c baking cocoa
1 ½ c granulated sugar
2 c unbleached all purpose white flour
Nuts (optional)

Blend zucchini and oil. Add and mix other ingredients as listed. Pour into an ungreased 9x13 can. Bake 350 degrees F for 20-25 minutes.

Frosting
1 c. confectioners’ sugar
1/2c baking cocoa
½ c butter, softened but still cool
2 Tbl milk
1 tsp vanilla

Beat ingredients until creamy. Add 2 c. confectioners’ sugar and ¼ c. milk.



Modified Zucchini Brownies
Brownies
2 heaping cups firmly packed grated zucchini
2/3 c oil
1/3 c unsweetened applesauce
1 tsp salt
½ tsp baking soda
2 tsp vanilla
1/3c + 2 Tbl baking cocoa
1 ½ c sugar
1 1/2 c unbleached all purpose white flour
½ c whole wheat flour

Follow directions for Original Zucchini brownies. Spray pan. Don’t add more whole wheat flour—it makes the brownies taste too fruity and not enough chocolatey.

Frosting Recipe is the same.

  1. And I was going to make zucchini brownies (for the blog). Good thing I can avoid that now because I have a big cake in my fridge to eat.
