Original and Modified Zucchini Bread

Original Zucchini Bread

3 eggs
2 c granulated sugar
1 c oil
2 c grated zucchini
2 tsp vanilla
3 c flour
1 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon

Combine sugars and eggs and beat well. Add oil, zucchini, and vanilla. Blend flour, salt, cinnamon, soda and baking powder. Add to zucchini mixture. Bake in greased and floured pans at 350 degrees F for one hour. Makes 2- 9x5 pans.

Modifications to Zucchini Bread

3 eggs
1 c granulated sugar
1 c brown sugar (light/dark depending on your taste)
2/3 c oil
1/3 c unsweetened applesauce
2 heaping cups firmly packed grated zucchini
1 Tbl vanilla
3 c sifted flour
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
1 Tbl Cinnamon

Follow directions for Original Zucchini Bread Recipe.

Because of the applesauce, this recipe can also be cooked as cake/bars. It makes the recipe much lighter in texture.
